Hop Along is made exclusively from Straus Family Creamery organic cow’s milk and crafted into five-pound wheels. After a gentle bath in organic hard cider and 45 days of aging, it develops an aroma of apple and brioche and a silky, semi-firm interior.
Chimney Rock is a small, soft round that is dusted with dried Shiitake mushrooms and black pepper. Starts with a single-source organic cows milk from John & Karen Taylor’s Bivalve Dairy which makes for a beautiful buttercup yellow paste while the mushroom and pepper add distinct notes of earth and spice.
Devil’s Gulch is a soft cow’s milk cheese that develops a delicate white bloom and is rolled in a mixture of sweet and spicy locally grown heirloom peppers. The peppers give the cheese a bright, sweet spiciness that is tempered by the rich creamy paste.
